The bachelor thesis focuses on the milk yield of Holstein cattle. The aim of the thesis was to focus on the issue of milk yield and characteristics of the Holstein breed. The first part of the thesis describes problems related to the characteristics and composition of cow's milk and collagen, mammary gland (mammary gland growth and development, mammary gland physiology and anatomy), factors influencing dairy yield, milk performance evaluation and characteristics of the breed. The second part of the thesis focuses on the characteristics of the holding, the characteristics of the herd being studied and the evaluation of the dairy cow performance in Dubická agricultural joint-stock company. In conclusion, it has been found that milk performance has changed over the years. For the period 04/2016 - 03/2017 and 04/2017 - 03/2018, changes in the length of time, protein and fat content, fat and milk yields occurred. Of these indicators, the period has the greatest impact on milk production. In the lactation order, it has been found that increasing lactation rates increase milk yield in the amount of milk.
